Ingredients
- shrimp: peeled and deveined, tail on or off.
- bell peppers: red, yellow, green, orange, whatever you prefer! I like to use a mix for a more colorful dish.
- onion: yellow, white, or red.
- spices: chili powder, onion powder, garlic powder, ground cumin, smoked paprika, salt, and pepper. You can also use a store-bought fajita seasoning or taco seasoning.
- olive oil: alternatively, you can use avocado oil
- tortilla: flour tortillas and corn tortillas work great for this recipe. Can sub for lettuce wraps as well.
- fresh cilantro: for garnishing
- fresh limes
How to Make Sheet Pan Shrimp Fajitas
1. Preheat oven to 450°F (232°C). In a large bowl, toss the veggies and shrimp in the fajita seasoning and oil.
2. Place in the oven and bake for 8 minutes, then switch to broil and broil for an additional 2 minutes to achieve a slight char on the fajitas.
3. While the shrimp and vegetables are cooking, warm up the tortillas in a large skillet on the stovetop. Cooked shrimp should have an internal temperature of at least 145°F (62°C).
4. Place the cooked shrimp and veggies in the tortillas, squeeze fresh lime wedges over the top, and sprinkle with fresh cilantro.

Instructions
