Egg White Bites

This healthy, protein-packed egg white bites recipe is the perfect grab-and-go breakfast. Skip the Starbucks line and make these egg white bites at home with nutritious ingredients like cottage cheese, egg whites, roasted red bell peppers, and green onions.

Delicious Grab-and-Go Egg White Bites

This is a tried and true copycat Starbucks egg white bites recipe. I designed this recipe to taste as close to the original recipe as possible, and I must say, they really do! I’ve also designed this recipe to be cooked in the oven, creating a similar texture to the sous vide egg bites.

They are great for meal prep – make a big batch of these for the week and simply pop them in the microwave on your way out the door! Whether your diet is keto, or low-carb, or just want to get more protein in, these healthy egg white bites will be your next go-to breakfast recipe. They will keep you satisfied and energized all morning!

Ingredients

  • Egg Whites: I recommend separating the egg whites from the yolks for this recipe. Liquid egg whites from the carton tend to be watery, thus making the egg muffins watery. 
  • Shredded Monterey Jack Cheese: If you can’t find Monterey jack cheese, Colby jack or pepper jack cheese can be used in place of Monterey jack cheese.
  • Cottage CheeseCottage cheese is not only high-protein but also adds to the creaminess of the egg bites. I recommend using full-fat cottage cheese for flavor, however, low-fat can be substituted. 
  • Low-Fat Feta Cheese: Feta cheese is salty and tangy and compliments well with the other ingredients.
  • Roasted Red Bell Peppers: I’m using jarred roasted red bell peppers since they’re already cooked. If you can’t find these at your grocery store, you can substitute them with pimento peppers. You can also use fresh diced bell peppers; just note they won’t be cooked down and will have a crunchier texture.
  • Green Onions: The mild flavor of green onions complements and enhances the egg whites and cheeses nicely. Chives can be substituted for green onions. 
  • Hot Sauce: Hot sauce adds a bit of depth to the overall recipe. Don’t worry, it won’t make your egg bites spicy.
  • ​​​​Arrowroot Powder: Arrowroot powder protects the egg bites from overcooking and turning rubbery. You can use cornstarch in place of arrowroot.
  • Butter
  • Salt and Black Pepper

How to Make Healthy Egg White Bites

The secret to making these egg white bites in the oven is using a silicone muffin pan.
I understand you might be hesitant about acquiring another kitchen gadget, but I strongly suggest considering a silicone muffin pan for these egg bites. The egg white bites pop right out without getting stuck like a regular muffin pan. No stubborn bits to soak and scrub here! 

1. ​​​​To a blender, add the egg whites, cottage cheese, feta cheese, Monterey jack cheese, hot sauce, arrowroot powder, butter, salt, and pepper. Blend until smooth. 

2. Spray a silicone mold with cooking spray. Divide the green onions and roasted red bell peppers into each of the silicone muffin cups. Pour the egg mixture into each muffin cup, filling them almost to the top.

3. Bake in the oven for 25-30 minutes, until the egg whites are firm and cooked through. You can check by sticking a toothpick into the middle of an egg bite and it comes out clean. 

Optional Add-Ins

  • Eat your veggies: This recipe is great for adding different veggies that may be sitting in your fridge just waiting to be used. Add broccoli, tomato, baby spinach, mushrooms, and zucchini to the egg-white mixture. 
  • Experiment with seasonings and herbs: To boost the flavor, add garlic powder, onion powder, and red chili flakes. Herbs like fresh basil, dill, or cilantro make tasty additions. 
  • Use different cheeses: Instead of feta cheese and Monterey jack cheese, use sharp cheddar cheese and Swiss cheese for a different flavor profile. 

Storage Instructions

To refrigerate, store the egg white bites in an airtight container and store them in the fridge for up to 4 days. 

To freeze, wrap each egg white bite in plastic wrap and place them in a freezer-safe container. Enjoy within 3 months. To reheat, thaw them in the fridge overnight and warm them in the microwave for 45-60 seconds.

Ingredients
  

  • 2 cups egg whites
  • 3/4 cup cottage cheese (full-fat)
  • 1/2 cup Monterey jack cheese (shredded)
  • 1/3 cup low-fat feta cheese (crumbled)
  • 1/2 cup roasted red bell peppers (chopped)
  • 2-3 tablespoons green onions (chopped)
  • 4 dashes hot sauce
  • 1 tablespoon butter
  • 1 tablespoon arrowroot powder (or cornstarch)
  • 1/2 teaspoon salt
  • black pepper (to taste)

Instructions
 

  • Preheat oven to 350°F (176°C). Spray a silicone muffin pan with cooking spray and set to the side.
  • To a blender, add the egg whites, cottage cheese, feta cheese, Monterey jack cheese, hot sauce, arrowroot powder, butter, salt, and pepper. Blend until smooth. 
  • Divide the green onions and roasted red bell peppers into each of the silicone muffin cups. Pour the egg mixture into each muffin cup, filling them almost to the top.
  • Bake in the oven for 25-30 minutes, until the egg whites are firm and cooked through. You can check by sticking a toothpick into the middle of an egg bite and it comes out clean. Let the bites cool for 5-10 minutes before taking them out of the pan.
