Air Fryer Low Carb Zucchini Fritters

Easy Air Fryer Low Carb Zucchini Fritters

If you’re looking for a dairy-free, gluten-free air fryer zucchini fritters recipe without sacrificing all the flavor, these fritters are insanely good! They have minimal prep time and are so easy to make. Zucchini is one of my favorite vegetables – it’s packed with vitamin C and potassium, low in carbohydrates and high in fiber. Out of all the zucchini recipes, air fryer fritters are at the top of my list! They are light, crispy and filling. I will give you the option to pan fry as well!

  • zucchini
  • almond flour
  • eggs
  • salt and black pepper
  • baking powder
  • seasonings: onion powder, garlic powder, paprika

How to drain water from zucchini

Zucchini contains a lot of water, so this step is crucial so that your fritters stay together instead of getting soggy.

Step 1: Trim ends of the zucchini and grate on a box grater, using the side with large holes.

Step 2: Over a bowl or the sink, squeeze shredded zucchini to remove as much liquid as you can. I like to place the zucchini in a cheese cloth, tea towel, or a clean kitchen towel and squeeze out the water. I’ve found that this method gets much more water out as opposed to just using my hands or paper towels.

Step 3: Place shredded zucchini in a colander in the sink over a bowl and sprinkle with a bit of salt. Let sit for 10 minutes to drain out as much more water as possible. 

How to make Air Fryer Low Carb Zucchini Fritters

Step 1: Preheat air fryer to 400°F (205°C). 

Step 2: Add shredded zucchini to a bowl and add almond flour, onion powder, garlic powder, paprika, eggs, baking powder, salt and pepper to the bowl and mix until fully combined. The mixture should be pretty thick.

Step 3: Using your hands, shape the batter into small balls. Line the air fryer basket with parchment paper and spray with cooking spray or avocado oil. Place fritters in the basket, spray oil on the tops, and air fry for 9 minutes. Flip the fritters and cook for an additional 3 minutes.

Step 4: Remove fritters from air fryer and let cool. Garnish with green onions or fresh parsley.

To pan fry: Heat a large skillet over medium high heat and add enough oil to coat the bottom of the pan. Form the zucchini mixture into small patties. Pan fry on each side for 2-3 minutes or until golden brown and crispy. Place the zucchini cakes onto a plate or baking sheet lined with paper towels to soak up excess oil.

What to serve with air fryer low carb zucchini fritters

Sauces! I like to top these fritters off with sour cream and green onions. They are also delicious dipped in ranch dressing and tzatziki sauce.

Add in Ideas

Get creative! Take it up a notch by adding crumbled cook bacon and grated parmesan cheese to the mixture. You could also add in green onions.

Storage Instructions

Fridge: Store zucchini fritters in an airtight container in the fridge for up to 4 days. Reheat in the air fryer at 350 for 2-3 minutes until they are warmed through. 

Freeze: Store zucchini fritters in a freezer bag or freezer safe container for up to 2 months.

Ingredients
  

  • 500 grams zucchini (shredded)
  • 3/4 cup almond flour
  • 2 eggs
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika powder
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper

Instructions
 

  • Preheat a parchment lined air fryer to 400°F. Shred and strain water from zucchini. Place in a large bowl.
  • Add almond flour, onion powder, garlic powder, paprika, eggs, baking powder, salt and pepper to the bowl and mix until fully combined.
  • Using your hands, shape the fritters into small balls. You should be able to get 10-12 fritters. Place in the air fryer basket, spray with cooking spray and cook for 9 minutes. Flip the fritters and cook for an additional 3 minutes.
  • Remove from air fryer and let cool.
